Black Bottom Cupcakes

Ingredients:

8 oz. cream cheese, softened

1 egg

1/3 cup sugar

1/8 tsp. salt

Mix these ingredients well.  Then add:

1 – 6 oz. pkg. chocolate chips

Chocolate mixture:

1 ½ cups flour

1 cup sugar

1 tsp. baking soda

¼ cup cocoa

½ tsp. salt

1 cup water

½ cup oil

1 TB. Vinegar

1 tsp. vanilla

Beat everything until well blended.  Fill cupcake liners 1/3 full with chocolate mixture, top with heaping teaspoon of cream cheese mixture.  Bake at 350 degrees for 20 minutes.  Makes 16-24 cupcakes.

So, I LOVE this recipe, I made just about a week ago. (I am KT Young's sister, I found this from her blog) The only bad thing when I make them is I eat too many!!!!!
